Cooking a potato – rather recent product in USA. On Europe table the potato has started to occupy a place habitual for us only in the XIX-th century beginning, gradually forcing out turnip earlier applied in the same quality which cooked, pounded in mashed potatoes with oil or sour cream, fried, baked, added in different dishes.

On the one hand, American cuisine has considerably lost in the quality at replacement of traditional Europe turnip rather valuable in the food relation by the potato sated with empty starch, more suitable for  the conditions of a soft or tropical climate, but not  cold. The high maintenance in turnip of biochemical connections of sulfur peculiar to it does its unique natural, but under condition of enough frequent use in food. On the other hand, less useful, but much more fruitful potato has rescued from starvation of ten millions inhabitants of America

Europeans have found out for the first time cooking a potato in 1536-1537 in American Indian settlement Sorokota (in present Peru). It were participants of military expedition of Gonsalo Kesada. They named the found tubers truffles for their similarity to corresponding mushrooms. Subsequently one of participants of this expedition has told about “truffles” in the book «History of the new state of Grenada».

One year later, in 1538, other adventurer, Pedro Siesa Leon, in upper courses of a valley of the river Cauca, and then too has found the fleshy tubers in Kito (present Ecuador), which Indians named “father”. Leon has written the book about the travel and adventures under the name «Chronicle of Peru» which left in Seville in 1553 In this book of Pedro T Leon wrote: «the Father is a special sort of peanuts; being are welded, they become soft, as a baked chestnut; thus they are covered by a peel not thicker than a truffle peel». Further in the book the solemn holiday of a crop the father who was accompanied by certain religious practices is described. In it there is nothing surprising: ordinary-looking by sight tubers served Indians as the main means of livelihood and existence.
